Heat a large pot or Dutch oven over medium-high heat.
Add the beef stew meat and cook until browned on all sides.
Remove the meat from the pot and set it aside.
In the same pot, add the chopped onion and minced garlic, sauté until the onion becomes translucent and the garlic becomes fragrant.
Add the potatoes and carrots to the pot and cook for a few minutes, stirring occasionally.
Return the beef stew meat back to the pot.
Add the diced tomatoes, corn, kidney beans, beef broth, Worcestershire sauce, smoked paprika, dried thyme, salt, and pepper.
Stir everything together to combine.
Bring the stew to a boil, then reduce the heat to low and cover the pot.
Allow it to simmer for about 1 hour or until the beef is tender and the flavors have melded together.
Check the seasoning and adjust with more salt and pepper if desired.
Serve the cowboy stew hot, garnished with some fresh parsley if you like.
