Brown 2 pounds of ground beef in a large purple stockpot.
Cut kielbasa into bite-sized pieces and add to the pot with the ground beef.
Stir the beef and kielbasa until browned, then drain excess grease.
Add 1 diced yellow onion and 1 diced bell pepper to the pot.
Add minced garlic stored in olive oil to the pot.
Add 2 cans of diced tomatoes with chilies and 3 diced roma tomatoes to the pot.
Pour in 1 quart of chicken broth, adjusting as needed based on the juiciness of the tomatoes.
Add 1 can of corn and 2 bay leaves to the mixture.
Stir everything together and bring to a simmer.
Add 2 teaspoons of crushed red pepper flakes, 2 teaspoons of kosher salt, 2 cans of rinsed and drained pinto beans, 1.5 tablespoons of ground cumin, and 1.5 teaspoons of crushed black pepper to the pot.
Dice 2 potatoes and add them to the stew, deciding if more chicken broth is needed based on the liquid level.
