Introduce 400 grams of chickpeas and 300 grams of sweet corn into a blender.
Add 1 teaspoon of paprika, 1 teaspoon of cumin, and 1 teaspoon of ground coriander to the blender.
Add 1/2 teaspoon of chili, a little salt, and black pepper to the mixture.
Zest 1 lemon and add the zest to the blender, then cut the lemon in half and add the juice of 1 lemon.
Blend the mixture until combined but still chunky.
Add porridge oats to the mixture to help bind it together, blending again until it reaches a pate-like consistency.
Transfer the mixture to a bowl and refrigerate for about 30 minutes to firm up.
Slice 2 onions and heat 2-3 tablespoons of olive oil in a pan.
Add the sliced onions to the pan and pour in a generous amount of balsamic vinegar.
Cook the onions on medium heat for about 25 minutes until soft and sticky, stirring occasionally.
In a separate bowl, prepare the lime mayonnaise by adding 2 egg yolks, zest of 1 lime, and juice of 1 lime.
Add around 1 teaspoon of English mustard to the egg yolks and whisk together.
Slowly drizzle in olive oil while whisking until the mixture thickens into a mayonnaise consistency.
Once the onions are caramelized, set them aside.
Heat a third pan with a drizzle of olive oil and add the chilled burger mixture, cooking until golden brown.
Assemble the burger by placing a generous portion of caramelized onions on the bottom of the bun, followed by the burger patty, mixed leaves, and a spoonful of lime mayonnaise.
