1 cup hot water
1/2 cup apple cider vinegar
1 tablespoon cane sugar
1 1/2 teaspoons salt
1/2 cup olive oil
1/4 cup red wine vinegar
1 tablespoon lemon juice
1 tablespoon Dijon mustard
1 1/2 teaspoons oregano
1 teaspoon honey
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cans chickpeas (15 oz each), drained and rinsed
1 large English cucumber, diced
1 cup cherry tomatoes, halved
1/2 cup Kalamata olives, sliced
1 1/2 cups crumbled feta cheese
8 cups baby spinach
1 to 1 1/2 cups pickled red onions

Pour the brine over the sliced onions in the mason jar and refrigerate overnight.

Prepare the Greek vinaigrette by combining 1/2 cup olive oil, 1/4 cup red wine vinegar, 1 tablespoon lemon juice, 1 tablespoon Dijon mustard, 1 1/2 teaspoons oregano, 1 teaspoon honey, 1 minced garlic clove, 1/2 teaspoon salt, and 1/4 teaspoon black pepper in a bowl and mix well.
