Welcome to the culinary Advent calendar and today I will show you how to make delicious Spekulatius cookies.

For the recipe, we need 300 g of flour, which includes 1 teaspoon of baking powder, 120 g of brown sugar, 150 g of butter at room temperature, 60 g of ground almonds, 1 egg at room temperature, and 4 teaspoons of speculoos spice.

If you don't want to use speculoos spice, you can substitute it with lemon zest, cinnamon, nutmeg, and cardamom.

First, cream the butter and brown sugar together until fluffy. I will use my KitchenAid mixer with the flat beater attachment.

If you don't have a stand mixer, you can use a hand mixer with a whisk attachment, but make sure the butter is soft.

Once the butter and sugar are well combined and the sugar has dissolved, add the egg and mix until well incorporated.

It's important that all ingredients are at room temperature for proper mixing.

Next, prepare the dry ingredients by mixing the flour with the baking powder, then add it to the butter mixture along with the ground almonds and speculoos spice.

Mix on low speed until a smooth dough forms.

Wrap the dough in plastic wrap and chill it in the refrigerator for one hour to firm up the butter.

After chilling, roll out the dough on a floured surface to about 3 mm thick.

Cut the dough into desired shapes, either rectangles or using cookie cutters.
