Cut the leek and stir it with a bit of olive oil and salt. Then let it cool.

Mix the flour with salt, then add the water and olive oil and knead it until you obtain a compact dough without over kneading. Then let it rest, wrapped in plastic wrap, for 30 minutes.

Mix the eggs and salt. Then add ricotta cheese and cream cheese, mixing well until you obtain a soft cream. Add nutmeg and pepper.

On a lightly floured surface, roll the dough out and gently place it into a tart tin previously greased. Make small holes, using a fork, into the dough. Then blind bake it for 10 minutes at 190ºC.

Take out the crust and remove the ceramic beans.

Mix the leek with the cheese mixture and place it on the top of the crust.

Bake it for 30 minutes at 180ºC.
