Cut chicken breasts to make them even in thickness, either by trimming or pounding them flat with plastic wrap.
Wash hands after handling raw chicken.
Prepare a marinade with olive oil, soy sauce, dijon mustard, a small amount of sugar, lemon juice, and garlic.
Place chicken breasts in a ziploc bag with the marinade and let marinate for at least 1 hour.
Clean the grill grates and rub them with canola oil using paper towels.
Preheat the grill to medium-high heat.
Place chicken on the grill with the flat side down.
Cook the chicken for about 4 minutes on the first side before flipping.
Check for grill marks and flip the chicken when it releases easily from the grill.
Use a digital thermometer to check the internal temperature, aiming for 160°F before removing from the grill.
Let the chicken rest for 5-10 minutes before slicing to retain juices.
Optionally baste the chicken with barbecue sauce or a mustard mixture after the first flip.
