Preheat the pellet smoker to 350°F.
Place a cast-iron skillet in the smoker to warm up.
Boil water in a pot and add the pasta shells, cooking until slightly underdone as they will finish in the skillet.
In a separate pan, melt the butter and sauté 1/2 cup of chopped onions until softened.
Add cream to the onions and heat until scalded.
Stir in 2 cups of shredded cheddar jack cheese and 1 cup of shredded mozzarella cheese until melted and combined.
Combine the cooked pasta with the cheese sauce and mix well.
Transfer the mac and cheese mixture into the preheated cast-iron skillet.
Spread the mixture evenly and let it cook in the smoker for about 30 minutes.
After 30 minutes, place the skillet under the broiler for about 5 minutes to crisp the top.
