French Onion Pot Roast

1 chuck roast
2 tbsp vegetable oil
1 package onion soup mix
1 can French onion soup
1/4 cup beef broth
1/2 cup butter
2 sliced onions (1 white, 1 yellow)
2 cloves garlic (chopped)
1 tsp fresh parsley (chopped)
1 tsp fresh rosemary (chopped)
1 tsp kosher salt
1 tsp Creole seasoning
1 tsp thyme
1 tsp black pepper
1/4 cup cornstarch
1/2 cup water

Add sliced onions to a bowl (mixture of white and yellow onions).

Add chopped garlic, thyme, rosemary, and onion soup mix to the bowl with onions and mix well using hands or a utensil.

Season the chuck roast with kosher salt, black pepper, and Creole seasoning on both sides, pressing the seasoning in.

Heat 2 tablespoons of vegetable oil in a medium-high heat skillet.

Sear the chuck roast for 3 minutes on each side until browned, then sear the sides for about 1 minute each.

Turn off the heat and transfer the roast to a slow cooker.

Spray the inside of the slow cooker with cooking spray.

Add half of the onion mixture to the bottom of the slow cooker.

Pour in 1 can of French onion soup, 1/4 cup of beef broth, and a splash of Liquid Smoke.

Place the chuck roast on top and add the remaining onion mixture, French onion soup mix, and beef broth.

Slice the butter thinly and distribute it randomly over the mixture in the slow cooker.

Cover the slow cooker and cook on low for 6 to 8 hours, or on high for 4 to 6 hours.

After about 6 hours, check the roast for tenderness; it should be easily shreddable.

Remove the roast from the slow cooker, shred it, and remove the bone if present.

Mix 1/4 cup of cornstarch with 1/2 cup of water and pour it into the slow cooker to thicken the sauce.

Return the shredded pot roast to the slow cooker and let it warm for 15 to 20 minutes.

Plate the pot roast over rice or mashed potatoes and garnish with parsley.
