Old Fashioned Potato Soup

4 large potatoes, peeled and diced
1 medium onion, chopped
2 cloves garlic, minced
4 cups vegetable broth
1 cup milk
1/2 cup heavy cream
1/4 cup butter
1 tsp salt
1/2 tsp black pepper
1/2 tsp thyme
1/4 cup chopped green onions (for garnish)

In a large pot, melt the butter over medium heat.

Add the chopped onion and minced garlic, sauté until the onion is translucent.

Stir in the diced potatoes, salt, pepper, and thyme, cooking for about 5 minutes.

Pour in the vegetable broth and bring to a boil.

Reduce heat and let it simmer for 20-25 minutes, or until the potatoes are tender.
