8 oz cream cheese room temperature
pinch sea salt and black pepper to taste
1 package frozen puff pastry (17 ounces)
½ cup Gruyere finely grated
1 large egg (plus 1 tablespoon water) for egg wash

Preheat oven to 400 degrees. Line a baking sheet with parchment paper or a Silpat liner and set aside.
