Break 4 large eggs into a bowl and add 1 teaspoon of salt.
Whisk the eggs until smooth and combined.
Add 2 tablespoons of sour cream, 1/2 teaspoon of black pepper, and 1/2 teaspoon of oregano to the eggs and whisk together.
Cut 4 to 5 medium potatoes into even cubes.
Pour olive oil into a frying pan to coat the bottom and add the potatoes.
Fry the potatoes until golden crust forms.
Cut 1 zucchini into cubes and add to the frying pan with the potatoes.
Add 1/2 teaspoon of salt and stir, frying together for 3-5 minutes before removing from heat.
Transfer the potatoes and zucchini into a large mixing bowl.
Add more olive oil to the pan and slice 4 chorizo sausages into circles, frying them.
Slice 6 smoked Polish sausages into circles and add to the pan with the chorizo.
Slice 1 leek and 1 carrot into circles and add to the sausages in the pan.
Slice 7 ounces (200 grams) of mushrooms and add to the pan, cooking for another 5-10 minutes until tender.
Transfer the sausage and vegetable mixture into the bowl with the potatoes and zucchini.
Pour the egg and sour cream mixture over the top and mix until well combined.
Line a springform baking dish with parchment paper and brush with olive oil.
Pour the entire mixture into the dish and spread it out evenly.
Grate 8 ounces (250 grams) of Dutch hard cheese and sprinkle over the top.
Cut cherry tomatoes in half and place on top of the cheese, adding mozzarella cheese balls.
Preheat the oven to 360 degrees Fahrenheit (180 degrees Celsius) and bake for 20-30 minutes until golden and melted.
Finely chop 1 small bunch of parsley and sprinkle over the casserole before serving.
