Ingredients

  • 4 large russet potatoes
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup chopped green onions
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2Wash and scrub the russet potatoes thoroughly, then poke holes in them with a fork.
  3. 3Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until tender.
  4. 4Once the potatoes are done, remove them from the oven and let them cool slightly.
  5. 5Cut the potatoes in half lengthwise and scoop out the insides into a mixing bowl, leaving a small border of potato in the skins.
  6. 6To the bowl, add sour cream, shredded cheddar cheese, crumbled bacon, chopped green onions, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  7. 7Spoon the potato mixture back into the potato skins, packing it in tightly.
  8. 8Place the filled potato skins on a baking sheet and return them to the oven.
  9. 9Bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
  10. 10Remove from the oven and let cool for a few minutes before serving.

Instructions

  1. 1In a mixing bowl, combine the sour cream and mayonnaise until smooth.
  2. 2Add the shredded cheddar cheese to the mixture and stir well.
  3. 3Fold in the chopped green onions and diced tomatoes.
  4. 4Season the dip with garlic powder, onion powder, salt, and black pepper.
  5. 5Mix all the ingredients until well combined.
  6. 6Transfer the dip to a serving bowl.
  7. 7Cover and refrigerate for at least 1 hour to allow the flavors to meld.
  8. 8Serve chilled with tortilla chips, crackers, or fresh vegetables.
