Passover Granola

Cultural Context

Passover Granola is a delightful twist on traditional granola, adapted for the Jewish holiday of Passover. During this time, leavened products are avoided, making matzah a perfect base for this crunchy snack. The granola is often enjoyed during the holiday as a nutritious breakfast or snack, celebrating the spirit of Passover with wholesome ingredients. Today, variations abound, with many incorporating local nuts and dried fruits, making it a beloved treat beyond the holiday season.

1

Preheat the oven to 325°F.

2

Gather ingredients: matzah farfel, chopped almonds or pecans, unsweetened coconut, brown sugar, honey, and oil.

3

On a sheet pan lined with parchment paper or sprayed with non-stick spray, combine 2 1/2 cups matzah farfel, 1 cup chopped almonds or pecans, and 1 cup unsweetened coconut.

4

Bake in the oven at 325°F for 12 to 15 minutes to dry and crisp the mixture.

5

Remove from the oven and let it cool on the counter.

6

In a pot, combine 1/4 cup oil (or margarine), 1/4 cup honey, and 1/4 cup brown sugar. Optionally, add a little maple syrup.

7

Cook the mixture on the stove, stirring until the sugars dissolve and it turns into a caramel-like consistency.

8

Pour the caramel glaze over the dry ingredients on the sheet pan and mix well using two spatulas or spoons.

9

Reset the oven to 350°F and once preheated, return the sheet pan to the oven for about 15 minutes until it turns a nice brown toasted color.

10

After 15 minutes, lower the oven temperature to 200°F and let it dry for another 15 minutes, checking frequently to prevent over-browning.

11

Remove from the oven and let it cool on the counter; it will harden as it cools.

12

Once mostly dry, mix in up to 1 cup of raisins.
