2 lbs beef short ribs
1 onion, diced
2 cloves garlic, minced
1 bell pepper, diced
4 carrots, sliced
4 potatoes, cubed
2-3 ears of sweet corn, cut into thirds
2 tablespoons olive oil
2 cups beef broth
1 teaspoon oregano
1 teaspoon cumin
salt and pepper to taste

Heat the olive oil in a large pot over medium heat.

Add the beef short ribs, onion, garlic, and bell pepper, and cook until the beef is lightly browned.

Add the carrots, potatoes, sweet corn, oregano, cumin, and salt and pepper. Mix well.

Add the beef broth and bring it to a boil.

Reduce heat and simmer for about 45 minutes, or until the beef is tender and the vegetables are cooked through.
