Jalapeño Cornbread

2 cups flour
1 cup yellow cornmeal
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup buttermilk
2 eggs
1/2 cup melted butter
1/2 cup diced pickled jalapenos
1/2 cup sliced fresh jalapenos
canola oil for spritzing

Preheat the oven to 450°F and place a cast iron skillet inside to heat up.

In a mixing bowl, combine the dry ingredients: flour, cornmeal, sugar, baking powder, baking soda, and salt. Mix well.

In another bowl, whisk together the wet ingredients: buttermilk, eggs, diced pickled jalapenos, and melted butter.

Combine the dry ingredients with the wet ingredients and mix until well combined.

Carefully remove the hot cast iron skillet from the oven using an oven mitt.

Spritz the skillet with canola oil.

Pour the batter into the skillet and place sliced fresh jalapenos on top.

Bake in the oven for 20 to 25 minutes.

Perform the toothpick test to check for doneness: insert a toothpick in the center and ensure it comes out clean.

Remove from the oven, add a little butter and drizzle honey on top before serving.
