Spicy Molokhia Sauce

Originating in Egypt, Molokhia is a traditional dish made from the leaves of the jute plant, enjoyed for centuries. It is often served with rice or bread and is considered a comfort food, rich in flavor and nutrition. The spicy version adds a kick, reflecting the Egyptian love for bold flavors. Today, variations of Molokhia can be found across the Middle East and North Africa, each with its unique twist.

Cayenne provides heat without the cost of fresh chilies.
Transfer three packs of frozen molokhia leaves to a bowl and rinse with water, then drain.
Bring 3 cups of water to a boil.
Add the molokhia leaves to the boiling water and let them soften.
Add the frozen spinach to the pot and stir to combine.
Let everything cook on medium heat.
Blend the onions, habanera peppers, and green onions together.
Use 2 cups of green onions total, with 1 cup for slicing and 1 cup for blending.
Add pre-cooked beef meat to the pot and let it simmer for a few minutes.
Season with salt, 1 tablespoon each of onion powder, fish powder, and shrimp powder.
Pour in about 2 cups of palm oil and stir to mix all ingredients thoroughly.
Cover the pot and cook on medium heat, stirring occasionally to prevent sticking.
Continue cooking until most of the water has evaporated and oil rises to the surface.
