Instructions

- 5Add fresh rosemary and spinach to the skillet; cook until spinach wilts, about 2-3 minutes.
- 6In a bowl, mix ricotta cheese, egg, nutmeg, salt, and pepper until smooth.
- 7Spread a layer of vegetable broth on the bottom of a baking dish.
- 8Layer lasagne noodles, followed by the ricotta mixture, roasted squash, sautéed vegetables, and mozzarella cheese. Repeat layers until ingredients are used, finishing with mozzarella and parmesan on top.
- 9Cover the dish with foil and bake for 30 minutes.
- 10Remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden.
- 11Let rest for 10 minutes before slicing and serving.
