2 cups Russet potatoes, diced

1/2 teaspoon black pepper
2 fresh bay leaves
1/2 cup sofrito
2 chili peppers, chopped
4 oz Serrano ham, diced
2 tablespoons capers
1 tablespoon paprika
1/2 cup dry sherry
1 cup white wine
2 cups chicken stock
1 cup fire roasted tomatoes
1/2 cup Spanish olives, sliced
1/4 cup flat leaf parsley, chopped

Brown bone-in, skin-on chicken thighs in olive oil in a Dutch oven until browned on both sides, seasoning with salt and pepper.
