  • 1 lb black cod fillet

  • 1/4 cup maple syrup
  • 1/4 cup apple cider vinegar
  • 1/2 cup water

Instructions

  1. 1In a bowl, mix together kosher salt, brown sugar, black pepper, smoked paprika, garlic powder, and onion powder to create the dry cure.
  2. 2Rub the dry cure mixture evenly over the black cod fillet, ensuring it is fully coated.
  3. 3Wrap the coated fillet in plastic wrap and refrigerate for 24-48 hours to allow the flavors to penetrate the fish.
  4. 4After curing, rinse the fillet under cold water to remove excess salt and sugar, then pat dry with paper towels.
  5. 5In a small saucepan, combine maple syrup, apple cider vinegar, and water. Heat over medium until the mixture is well combined and slightly thickened, about 5 minutes.
  6. 6Preheat your smoker to 175°F (80°C). If you don't have a smoker, you can use a grill with a smoking box or a stovetop smoker.
  7. 7Place the black cod fillet in the smoker and smoke for about 2-3 hours, or until the fish is cooked through and has a nice smoky flavor.
  8. 8Remove the smoked black cod from the smoker and let it cool slightly before slicing.
  9. 9Serve the smoked black cod on a platter with bagels, cream cheese, capers, and red onion for a traditional deli-style presentation.

  5. 5Mix all the ingredients together until well combined and creamy.
  6. 6Taste and adjust seasoning if necessary, adding more salt or lemon juice as desired.
  7. 7Transfer the dip to a serving bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  8. 8Serve chilled with crackers, bread, or vegetable sticks.
