They are a popular appetizer in Chinese cuisine, where they are known for their crispy exterior and soft, layered interior. Today, variations can be found across the globe, with different herbs and spices incorporated into the filling, making them a versatile dish cherished by many.

Mix together 1/2 cup unbleached white flour, 1 teaspoon wheat germ, 1/4 teaspoon plus 1/8 teaspoon salt, 1 teaspoon onion powder, 1/2 teaspoon garlic powder, 1/2 tablespoon nutritional yeast flakes, and 1 teaspoon aluminum-free baking powder in a bowl.
Add 3/4 cup water to the dry ingredients and mix well.
Chop 5 green onions and add to the mixture.
Add 1/2 cup shredded carrots to the mixture and mix thoroughly.
Turn the heat to medium-high.
In a pan, add 1 tablespoon of oil and let it heat up.
Pour in the mixture to the pan, spreading it out as thin as possible, similar to making a thin pancake.
Cook until the edges are cooked, then flip the roll over after about 10 seconds.
After flipping, cook the other side until golden brown, adding a little olive oil if needed.
Once both sides are golden brown, remove from heat and let cool slightly before slicing into rolls about an inch thick.
For the dipping sauce, mix soy sauce with a little water, add some green onions, a bit of sesame oil, and sprinkle with toasted sesame seeds.
