Coarsely chop 1/2 cup raw almonds with a large heavy knife and set aside in a bowl.
Peel 4-6 apples and cut them in half.
Remove the core from the apples using a melon baller or knife and slice them thinly.
Add all sliced apples to a baking dish and drizzle the juice of 1 whole lemon over the slices.
Drizzle 2 tablespoons melted butter over the apples.
Add the chopped almonds, 1/2 cup raisins, and 1/4 cup maple flakes to the apples.
Use a spatula to toss everything together until mixed.
Sprinkle plenty of cinnamon on top of the mixture.
Cover the baking dish with tin foil to prevent burning.
Preheat the oven to 400°F (approximately 200°C).
Place the covered baking dish in the preheated oven and bake for 40 minutes.
(Optional) Prepare a maple vanilla custard: add 1.5 cups of milk to a saucepan and heat over medium heat.
Separate 3 room temperature egg yolks and save the egg whites for another use.
Add 1 teaspoon vanilla, 1 tablespoon cornstarch or tapioca starch, and 2 tablespoons maple sugar to the yolks and whisk until smooth.
Once the milk is warm (not hotter than 170°F), add a tablespoon at a time to the yolks while whisking to temper the eggs.
After adding 4-6 tablespoons of milk to the yolks, pour the yolk mixture back into the saucepan with the remaining milk and whisk vigorously.
Return the saucepan to the stove and heat over low heat while stirring constantly, measuring the temperature to avoid surpassing 170°F.
Remove the saucepan from the heat once the custard thickens to a liquid consistency, about 10 minutes, while stirring occasionally to cool down.
Once the baked apples are done, remove them from the oven and take off the tin foil.
Serve the baked apples immediately, pouring the vanilla custard over them or adding a scoop of vanilla ice cream.
