Shred sharp cheddar cheese, mozzarella cheese, and smoked gouda, then set aside.

Dice half an onion and chop some chives, then set aside.

Peel 8 gold potatoes and cut them into thin slices.

In a pot over medium heat, add 1 cup of chopped bacon and cook until crispy, then remove from the pot.

Reduce heat to low and gradually mix in 1 cup of shredded sharp cheddar cheese, 1 cup of shredded mozzarella cheese, and 1 cup of shredded smoked gouda cheese until combined.

Add 1 tsp of salt, 1/2 tsp of pepper, 1/2 tsp of onion powder, 1/2 tsp of garlic powder, 1/2 tsp of paprika, and a dash or two of cayenne pepper, then mix until well combined.

Pour the cheese sauce over the potatoes and spread it out evenly with a spatula.

Add half of the remaining shredded cheese on top.

Cover the dish with tin foil and bake at 375°F for 65 minutes or until potatoes are tender when pierced with a fork.

Remove the tin foil and top with the rest of the shredded cheese and half of the chopped bacon.
