Set the toaster oven to 350°F on the middle rack.
Prepare small oven-safe dishes (cast iron or porcelain) for baking.
Cut the English muffin in half and then slice it lengthwise.
Butter the English muffin halves or spray with olive oil.
Place a pat of butter in the bottom of each baking dish.
Toast the buttered English muffin halves in the toaster oven for about 2 minutes.
Crack an egg into the dish with the veggie sausage and season with salt and pepper.
Return the dish to the toaster oven for about 4 minutes for a semi-soft set egg.
In a bowl, crack two eggs and add a splash of half-and-half, then scramble.
Season the scrambled eggs with salt and pepper, and add chives and cheddar cheese.
Remove the first dish from the oven; the yolk should be semi-set and the toast crispy.
Remove the second dish from the oven after 10-12 minutes; it should be puffed up and the toast crispy.
