Made from mashed potatoes and flour, they are a staple in many Scottish households, showcasing the resourcefulness of using leftover potatoes. These scones can be found in cafes and homes alike, often served warm with butter or alongside a full Scottish breakfast.

Olive oil reduces saturated fat while adding flavor.

Almond milk is lower in calories, while water is cost-effective.
Boil 1 pound of potatoes in a steamer until nice and dry.
Add 2 oz of soft butter to the boiled potatoes.
Mash the potatoes until smooth.
Add 4 oz of self-raising flour to the mashed potatoes and mix.
Add a little beaten egg to the mixture while mixing until a stiff dough forms.
Turn the dough out onto a floured board.
Flour your hands and work with the mixture, adding more flour as needed.
Roll out the dough to be fairly thin using a rolling pin or the back of a spoon.
Use a pot lid to cut out desired shapes and then cut them into four pieces.
Cook on a griddle for about 3-4 minutes on each side.
Check after 3 minutes and flip them over to cook the other side.
Place cooked scones onto kitchen roll for cooling.
Repeat the process with the remaining dough to make about 12 potato scones.
