Preheat the oven to 180°C (350°F).
Chop the onion finely and sauté in butter until soft.
Add chopped sage and cook for another minute.
Tear the bread into pieces and place in a large bowl.
Pour the sautéed mixture over the bread and mix well.
Add vegetable stock gradually until the mixture is moist but not soggy.
Season with salt and pepper to taste.
Transfer the stuffing to a greased baking dish.
Cover with foil and bake for 30 minutes.
Remove the foil and bake for an additional 10-15 minutes until golden brown.
