2 large cloves of garlic
12 large leaves of fresh sage
5 grams of flat leaf parsley
220 grams of fresh white bread (crusts removed)
100 grams of cubed unsalted butter
1 teaspoon of sea salt flakes
1 teaspoon of black pepper
half a tablespoon of melted unsalted butter

Slice off the end opposite the root of the onions and slice in half through the root.

Peel off the skin and save scraps for stock.

Make thin slices of the onion, stopping just before the root to keep it intact.

Rotate the onion and slice in half again, then dice into medium sized pieces.
