Potato Cheddar Frittata

6 large eggs
1 cup shredded cheddar cheese
2 medium potatoes, peeled and diced
1 small onion, chopped
1/2 cup milk
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1/4 cup fresh parsley, chopped

Preheat the oven to 375°F (190°C).

In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

Add the diced potatoes to the skillet and cook until they are tender, about 10-12 minutes, stirring occasionally.

In a bowl, whisk together the eggs, milk, salt, pepper, and paprika until well combined.

Once the potatoes are cooked, spread them evenly in the skillet and pour the egg mixture over the top.
