Sardines provide healthy omega-3s, while tilapia is a budget-friendly alternative.

Rinse sushi rice under cold water until the water runs clear.

Cook sushi rice according to package instructions, then let it cool.

Mix rice vinegar, sugar, and salt in a small bowl until dissolved.

Fold the vinegar mixture into the cooled rice gently, being careful not to mash the grains.

Slice the red snapper into thin sashimi-style pieces.

Prepare nori sheets by cutting them into halves or quarters, depending on size preference.

Lay a small amount of sushi rice on the nori, pressing gently to form a base.

Place a slice of red snapper on top of the rice.

Add a small dab of wasabi on top of the fish if desired.

Roll the sushi tightly from one end to the other, using a bamboo mat if available.

Slice the roll into bite-sized pieces with a sharp knife, wiping the blade between cuts.

Serve sushi with soy sauce, pickled ginger, and lime wedges on the side.
