Preheat the oven to 425°F (220°C).
Rinse and scrub the potatoes to remove excess dirt.
Drain and thoroughly pat dry the potatoes.
Cut the potatoes into even, bite-sized pieces, about 1/2 to 3/4 inches thick.
Transfer the cut potatoes to a large mixing bowl.
Drizzle the potatoes with 3 tablespoons of extra virgin olive oil.
Sprinkle with 1 teaspoon of fine sea salt and 1/2 teaspoon of freshly cracked black pepper.
Toss the potatoes until well combined and coated with oil.
Transfer the potatoes to a rimmed baking sheet, arranging them in a single layer with the flat side down.
Scatter 2 tablespoons of unsalted butter over the potatoes.
Bake in the center of the preheated oven for 25 to 30 minutes, until the bottoms are golden and easily release from the pan.
Flip the potatoes over and continue roasting for another 15 to 20 minutes, until golden brown and crispy.
Sprinkle with flaky salt immediately after removing from the oven.
Garnish with fresh chopped parsley before serving.
