Instructions
- 1Prepare the dough by mixing flour, egg, salt, and water until smooth.
- 2Knead the dough on a floured surface until elastic, about 5-7 minutes.
- 3Wrap the dough in plastic and let it rest for 30 minutes.
- 4Boil potatoes until tender, then mash and mix with cheese, salt, and pepper.
- 5Sauté onions in butter until golden, then mix into the potato-cheese filling.
- 6Roll out the dough thinly and cut into circles using a glass or cutter.
- 7Place a spoonful of filling in the center of each circle.
- 8Fold the dough over the filling and pinch the edges to seal tightly.
- 9Bring a pot of salted water to a boil and add pierogis in batches.
- 10Cook until they float to the top, about 3-5 minutes, then remove with a slotted spoon.
- 11Pan-fry the boiled pierogis in butter until golden brown, about 2-3 minutes per side.
- 12Serve hot with sour cream and chopped parsley.
