1 cup pearl barley
4 cups vegetable broth
2 tablespoons olive oil
3 cloves garlic, minced
1 onion, chopped
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup carrots, diced
1 cup celery, diced
1 cup zucchini, diced
1 teaspoon dried thyme
for garnish parsley
