Recipe Information
Kouign-amann
Combine the bread flour, sugar, salt, milk powder, dry yeast, beaten egg, water, and vodka in the stand mixer bowl.
Mix until a dough forms, then knead until smooth.
Let the dough rise until doubled in size.
Roll out the dough and incorporate the 120g of unsalted butter to create a butter sheet.
Fold the dough over the butter and roll it out again to create layers.
Cut the dough into pieces and shape them into rounds or squares.
Place the shaped dough on a baking tray and let them rise again.
Brush with melted butter and sprinkle with sugar before baking.
Bake until golden brown and crispy.
