Cut the campari tomatoes into quarters (slice in half and then in half again).
Place the sliced tomatoes in a baking tray lined with parchment paper, cut side up.
Drizzle extra virgin olive oil over the tomatoes, ensuring they are all coated.
Add salt, black pepper, minced garlic, and fresh diced thyme to the tomatoes.
Roast the tomatoes in the oven for 30 minutes, checking at 25 minutes for desired doneness.
While the tomatoes are roasting, prepare the hummus by opening the can of garbanzo beans and draining the liquid.
Place the garbanzo beans in a large bowl, add water, and slather the beans together with your hands to remove the skins.
Strain the beans to remove the skins, rinsing and repeating until most skins are off.
Transfer the beans to a food processor or blender.
Add 1/3 cup tahini, juice from one lemon (using a strainer to catch seeds), 3 minced garlic cloves, 2 tablespoons extra virgin olive oil, and 1 teaspoon sea salt to the blender.
Blend until smooth, adding a few tablespoons of water if needed to achieve the desired consistency.
Once the tomatoes are done roasting, let them cool for a few minutes.
Toast the sourdough bread until crispy, as the creator prefers it crispier than the original.
Spread a generous amount of hummus over the toasted bread.
Top the hummus with the roasted tomatoes and sprinkle with za'atar seasoning.
