Melt 1 tablespoon of butter in a medium or large saucepan over medium low heat.

Add 1 cup of matchstick carrots and half of a small chopped onion to the saucepan.

Increase the heat to medium and cook, stirring, until softened, about 3 to 4 minutes.

Pour in 4 cups of low sodium chicken stock, along with 1/2 teaspoon of salt and 1/4 teaspoon of coarsely ground black pepper.
