Heat olive oil in a large pot over medium heat until shimmering.
Add sliced bratwurst and cook until browned, about 5-7 minutes.
Remove bratwurst and set aside, leaving the drippings in the pot.
Add diced onion, garlic, carrots, and celery to the pot; sauté until softened, about 5 minutes.
Stir in diced potatoes and cook for an additional 2 minutes.
Pour in beer and scrape the bottom of the pot to deglaze.
Add chicken broth, mustard, salt, and black pepper; bring to a boil.
Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
Stir in heavy cream and cheddar cheese until melted and smooth.
Return bratwurst to the pot and heat through, about 5 minutes.
Garnish with chopped parsley before serving.
