Pat cod fillets dry with a paper towel to remove excess water.
Wash hands after handling the fish.
Season the cod fillets with kosher salt, black pepper, and Cajun seasoning on both sides.
Heat about 2 tablespoons of olive oil in a large skillet over medium-high heat.
Place the cod fillets skin side down in the skillet and cook for about 3-4 minutes.
Flip the cod fillets carefully and cook for another 3 minutes, checking for doneness.
Use a thermometer to check the internal temperature; it should reach 145°F.
Remove the cod fillets from the skillet and set aside.
Add 1/4 cup of butter to the skillet and allow it to melt.
Add 3 cloves of minced garlic to the melted butter and sauté until fragrant.
Stir in 2 tablespoons of lemon juice and 1 tablespoon of Cajun seasoning into the butter and garlic mixture.
Add chopped parsley to the sauce and mix well.
Plate the cooked rice and cod fillets, then drizzle the garlic butter sauce over the top.
