Combine all purpose unbleached sifted flour, warm filtered water, olive oil, himalayan sea salt, brown sugar, and sourdough starter in a glass bowl.
Mix all dry ingredients together until combined.
Alternate adding wet ingredients (sourdough starter, warm water, olive oil) while mixing until everything is combined.
Cover the bowl with a clean tea towel and let it rise for 2 to 4 hours depending on the warmth of your home.
On a floured surface, pull the dough out of the bowl, cut it in half, and knead and fold it to loosen up the dough.
Cover the kneaded dough with a wet tea towel and let it sit overnight.
Spray a cookie sheet with cooking spray and roll out the dough on a floured surface until it reaches all four corners of the baking sheet.
Cut the rolled dough into 24 rectangles for breadsticks.
Cover the cut dough with saran wrap and refrigerate for the final rise, or leave it out depending on the warmth of your home for an additional 24 hours.
Preheat the oven to 375 degrees Fahrenheit.
Bake the breadsticks for 11 to 15 minutes, flipping them halfway through (around 7 minutes).
Brush melted butter over the baked breadsticks and sprinkle with grated parmesan cheese and garlic salt.
