Fill a bowl with 1 cup and 1/4 of water at a temperature between 100 and 110°F.
Add 2 and 1/4 teaspoons of dry yeast to the water and let it sit for about 2 minutes.
In a separate bowl, combine 3 and 1/3 cups of King Arthur bread flour and 1 tablespoon of salt, then mix.
Add 2 tablespoons of sugar to the flour mixture and mix to dissolve.
Pour the yeast mixture into the flour mixture along with 3 tablespoons of olive oil.
Mix the ingredients on low speed for about 10 minutes until a dough forms.
Grease the dough with about a teaspoon of olive oil and cover it to let it rise for about 1.5 to 2 hours until doubled in size.
Once risen, remove the dough from the bowl and square it off.
Place semolina on parchment paper and cut the dough into pieces about 1 inch thick.
Shape each piece into a stick and space them about an inch apart on the prepared surface.
Preheat the oven to warm (not hot) and place the dough sticks inside to rise for about 20 minutes.
After 20 minutes, preheat the oven to 425°F.
Bake the breadsticks in the preheated oven for about 20 minutes until golden brown.
Melt salted butter in a pan until creamy, being careful not to burn it.
Grate about 1/2 cup of Romano cheese and set aside.
Blend 2-3 cloves of garlic with 1/4 cup of olive oil and the melted butter for about a minute until well mixed.
Add chopped Italian parsley to the garlic butter mixture and stir.
Once the breadsticks are done baking, brush them with the garlic butter mixture.
Sprinkle a mixture of 50% salt and 50% granulated garlic on top of the breadsticks.
Finish with a sprinkle of grated Romano cheese.
