In the bowl of a stand mixer, add 1 cup of warm water (about 110 degrees Fahrenheit) and 2 tablespoons of sugar.
Add 1 package (2 and 1/4 teaspoons) of active dry yeast to the water and sugar mixture. Whisk and let sit for about 5 minutes until foamy.
Melt 3 tablespoons of butter in a small bowl.
After 5 minutes, check the yeast mixture for foam. Then, add 2 cups (240 grams) of all-purpose flour to the mixing bowl.
Add the melted butter to the flour mixture.
Using a dough hook, mix on low speed until just combined.
After about 1 minute, add 1/2 cup (60 grams) of all-purpose flour and 1 teaspoon of salt while mixing.
Increase the mixer speed to medium and mix for about 6 minutes until the dough is smooth and elastic.
Grease a large bowl with leftover butter and place the dough inside. Cover loosely with a damp towel and let rise in a warm place for about 45 minutes or until doubled in size.
Preheat the oven to 400 degrees Fahrenheit.
Punch down the risen dough and transfer it to a floured surface. Divide the dough into 12 equal pieces, shaping it into a rectangle first.
Roll each piece into a 9-inch rope and place on a parchment-lined baking sheet, leaving about 2 inches of space between each breadstick.
Cover the breadsticks loosely and let rise for about 30 minutes until noticeably puffed.
Bake in the preheated oven for 12 to 17 minutes or until golden brown.
While the breadsticks are baking, prepare the garlic butter by smashing 2 cloves of garlic and mincing them.
Melt 2 tablespoons of unsalted butter in a bowl and add the minced garlic and 1/2 teaspoon of salt. Optionally, add minced parsley.
Once the breadsticks are out of the oven, brush them with the garlic butter and sprinkle grated Parmesan cheese on top.
