Traditionally served at upscale brunches, it combines poached eggs, Canadian bacon, and a rich Hollandaise sauce atop toasted English muffins. Canadian bacon

Separate 3 egg yolks into a bowl.
Melt 1 stick of butter in the microwave.
Add 1 tablespoon of lemon juice to the egg yolks.
In a pot, bring water to a gentle simmer and add 1 tablespoon of vinegar.
Use a colander to strain the egg whites from the yolks.
Create a vortex in the simmering water and drop the egg yolk into the center.
Poach the egg for about 3 minutes until the white is set and the yolk is runny.
Toast the English muffins with a little butter and cook the Canadian bacon.
Assemble by placing Canadian bacon on the muffin halves, topping with poached eggs, and drizzling with hollandaise sauce.
