Add 1 and 3/4 cups of white all-purpose or bread flour to a bowl.
Add 1 cup of whole wheat flour.
Add 1/4 cup of dark rye flour or substitute with another 1/4 cup of white flour if needed.
Whisk the dry ingredients together until well mixed and lumps are removed.
Add 2 to 2 and 1/4 cups of water to the dry mixture and stir until all flour is moistened.
Bring the dough together with hands to form a sticky ragged dough ball, adding a tablespoon or two of water if necessary.
Add 1 to 2 tablespoons of olive oil on top of the dough ball to prevent drying out.
Cover the bowl with plastic wrap and let it rise for 12 to 24 hours.
Flour the work surface and flatten the dough ball out.
Fold one corner of the dough back toward the center and rotate 90 degrees, repeating this process for three or four complete turns.
Let the dough rest for 5 to 10 minutes, then cut into four equal pieces.
Roll each piece into a tapered cylinder shape, pinching any gaps or creases to smooth the dough.
Preheat the oven to 450 to 500 degrees Fahrenheit.
Place the rolls on a baking sheet, ensuring they are about an inch shorter than the width of the sheet, and cover with a kitchen towel to rest for 1 to 2 hours.
Whisk an egg with 1 tablespoon of water and brush it on top of the loaves.
Score the tops of each loaf with scissors or a knife to allow steam to escape.
Place a pan with boiling water on the bottom tray of the oven to create steam.
Put the loaf tray on top and bake for 12 to 15 minutes or until the internal temperature reaches 190 degrees.
Transfer the loaves to a cooling rack and let them cool for about an hour.
