Start by using a food processor to make the dip ultra smooth and creamy.

Add 2 garlic cloves to the food processor and pulse until very finely minced.

Add about 1/4 cup of sun-dried tomatoes (about 6 tomatoes) and the oil they are packed in to the processor, then pulse until minced.

Rinse and drain a 15-ounce can of great northern beans, then add them to the food processor.

Crumble in 4 ounces of feta cheese into the processor.

Add a pinch of crushed red pepper flakes and pulse until the beans are smooth, scraping down the sides as needed.

Add 3 to 4 tablespoons of freshly squeezed lemon juice and 1/4 cup of water to thin out the dip, along with a pinch of salt and 1/4 to 1/2 teaspoon of dried oregano.

Taste the dip and adjust seasoning as needed, adding more salt if desired.

Transfer the dip to a serving dish and garnish with a drizzle of extra virgin Greek olive oil, capers, and reserved sun-dried tomatoes sliced in half.

Crumble a little feta cheese on top and serve with warm toasted pita bread or vegetables.
