Stollen, a traditional German bread, is often enjoyed during the Christmas season. Originating in Dresden, it symbolizes the Christmas spirit with its rich ingredients like dried fruit and nuts, often dusted with powdered sugar. Stollen Bites offer a delightful twist on this classic, making it easier to share and enjoy at festive gatherings. Today, variations abound, with many incorporating different fruits and spices, reflecting personal and regional preferences.

Start by adding self-raising flour into a bowl.
Grate butter into the flour and rub it in until it resembles fine breadcrumbs.
Add cinnamon, ginger, and salt to the mixture.
Add lemon zest for flavor.
Grate marzipan and add it to the bowl.
Soak sultanas in orange juice for about 2 hours, then add them to the mixture.
Mix all ingredients together until evenly combined.
Add buttermilk gradually, starting with half, and mix until the consistency is soft and slightly sticky.
Set the mixture aside.
Prepare a standard size baking tray, possibly needing two.
Using an ice cream scoop or tablespoon, take a portion of the mixture, roll it into a ball, and flatten it slightly before placing it on the baking tray.
Leave space between each ball on the tray.
Bake in the oven for about 15 minutes until golden brown.
Once baked, brush melted butter on each warm stollen bite.
Optionally, dip each one in icing sugar or sprinkle icing sugar on top.
Let the stollen bites cool for about 30 to 40 minutes before serving.
Cut one in half to show the inside texture with marzipan and fruit.
