Wash the kale leaves thoroughly.
Fold each kale leaf with the top side inwards and cut along the stem, discarding the dry and hard ends of the stalks.
Cut the kale stems at an angle.
Slice the garlic.
Crack 2 eggs and gently beat them with a fork.
In a nonstick pan, add a drizzle of oil and pour in the beaten eggs, letting them cook without scrambling.
Once the bottom part of the eggs is cooked, create bite-sized pieces instead of scrambling.
In a Dutch oven, add the oil from the preserved anchovies and heat it on medium flame.
Add the anchovies and garlic to the pot and cook on low flame until the garlic releases its flavor and the anchovies disintegrate.
Add sliced onions to the pot, keeping them crunchy by not adding them at the beginning.
Drizzle in more canola oil if necessary due to the oil soaking up.
After a minute, add the kale stems and cover the pot to steam them for cooking.
After 5 minutes, add the kale leaves and cover the pot again to help them shrink and cook with moisture.
After 3-4 minutes, add 1 and 1/2 cups of cold leftover brown rice to the pot and increase the flame to high.
In a separate step, explain how to prepare brown rice: wash 1 and 1/2 cups of brown rice three times, add 2 cups of water, and a drizzle of oil, then cook on high until boiling, reduce to low, and cook for 15-20 minutes, letting it sit for 10 minutes before fluffing with a fork.
Stir the cold brown rice into the kale and anchovies, sautéing to incorporate everything.
Taste the rice and add salt as needed, considering the salinity of the anchovies.
Finally, add the bite-sized pieces of fried egg to the rice mixture and mix well.
Serve the kale brown fried rice on plates, adding sriracha and green sauce on the side.
