Cover the perogi king with flour to prevent sticking.
Fill the perogi king with apple filling, using about 1 teaspoon to 1.5 teaspoons per pocket.
If making a lot, use a cookie brush to fill quickly; otherwise, fill by hand.
Place a second layer of dough over the filled pockets.
Roll the dough with a rolling pin to seal and push the filling down into the pockets.
The rolling pin also separates the perogi and cuts the sections in between.
Turn the perogi king over to drop the filled perogi out.
Check that the perogi are sealed and not leaking.
Remove any trimmings and set aside to roll out for another sheet of dough.
