2 medium sweet potatoes cubed
1/2 red onion diced
1 red bell pepper diced
2 tablespoons avocado oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon turmeric
1/2 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon pepper
oil spray
16 ounces Just egg
pepper to taste
1 15-ounce can black beans drained and rinsed
2 avocados sliced
green onions diced
jalapeño slices
vegan feta
everything seasoning
salsa verde

Preheat the oven and prepare a baking sheet.

Toss the cubed sweet potatoes, diced red onion, and diced red bell pepper with avocado oil, garlic powder, smoked paprika, turmeric, onion powder, salt, and pepper.

Spread the mixture on the baking sheet and roast until tender.

In a pan, spray oil and pour in the Just egg, cooking until set, seasoning with pepper to taste.

Assemble the bowls by adding roasted sweet potatoes, black beans, sliced avocados, and diced green onions.
