Crumble ½ cube (about 20 grams) of yeast into a tall container.

Add 75 grams of sugar and 1 sachet of vanilla sugar.

Pour in 275 milliliters of lukewarm milk and mix with a whisk or fork until dissolved.

Combine the yeast milk mixture with 500 grams of flour, 100 grams of soft butter, and a pinch of salt in a mixing bowl.

Knead for 4 - 5 minutes with a food processor or mixer with a dough hook until smooth.

Shape the dough into a ball and let it rest covered with a kitchen towel for 45 - 60 minutes in a warm place.

Put 125 grams of brown sugar in a small bowl and add 1 - 2 tablespoons of cinnamon, then mix well.

Roll out the risen dough on a floured surface to about 50cm x 40cm.

Brush the dough evenly with 100 grams of soft butter.

Sprinkle the cinnamon and sugar mixture over the buttered dough.

Roll up the dough from the long side and cut diagonally into 12 rolls.

Press the center of each roll with a wooden spoon to create the typical 'Franzbrötchen' look.

Place the rolls on a lined baking sheet with space between them and cover with a kitchen towel for another 30 - 45 minutes.

Preheat the oven and bake the rolls for 15 - 20 minutes at 180°C (top/bottom heat).
