In a mixing bowl, combine 300g high-gluten flour, 13g yellow sugar, 4g salt, 1.2g dry yeast, 11g honey, and 168g water. Mix on low speed until combined, then knead on high speed until the dough is smooth.

Shape the dough into a ball, cover with a damp cloth, and let it rest for 3 minutes.

Divide the dough into 4 equal portions, shape each into a ball with the seam side down, cover with a damp cloth, and let it rest for another 3 minutes.

Mix 40g brown sugar and 5g cinnamon powder together and set aside.

Gently flatten each dough ball, turn it over so the seam side is up, and roll it out into a rectangle measuring approximately 13x20cm.

Sprinkle 1 tablespoon (15ml) of the brown sugar and cinnamon mixture on the top half of the rectangle, then roll it from top to bottom, ensuring the sides are tightly sealed. Place the rolled dough seam side down and cover with a damp cloth for 3 minutes.

Roll the dough to a length of about 18cm, flatten one end with your palm, and wrap the other end around it, sealing the seam tightly.

Place the shaped bagels seam side down on a baking tray, cover with a damp cloth, and let them proof in an oven at 40°C for 30 minutes.

In a pot, bring 2L of water and 40ml of honey to a boil. Once small bubbles appear at the bottom, add the proofed bagels, flipping them occasionally, and boil for 30 seconds before draining and placing them back on the baking tray. Sprinkle with coarse sugar to taste.

Preheat the oven to 200°C/392°F. Bake the bagels for 15 minutes, then rotate the baking tray and continue baking for another 6-7 minutes. Remove from the oven and let cool on a wire rack.
