Prepare the dough by mixing flour and salt in a bowl.

Peel and core the apples; chop into small pieces.
In a saucepan, combine apples, sugar, cinnamon, lemon juice, and vanilla extract; cook over medium heat until apples are tender, about 5-7 minutes.
Remove from heat and let the filling cool completely.
Preheat the oven to 375°F (190°C).
Roll out the dough on a floured surface to about 1/8 inch thick.
Cut into circles using a large cookie cutter or bowl.
Place a spoonful of apple filling on one half of each circle.
Fold the dough over to create a half-moon shape; press edges to seal and crimp with a fork.
Beat the egg and brush it over the tops of the empanadas for a golden finish.
Place the empanadas on a baking sheet lined with parchment paper.
Bake for 20-25 minutes until golden brown.
Remove from oven and let cool slightly before dusting with powdered sugar.
